While more basic table sauces such as mayonnaise and ketchup will still be the most popular, it is the most exotic sauces, such as oyster, chilli, barbecue and soya that will register the higher volume growth. The tastes of consumers are broadening when it comes to table sauces, as consumers look beyond the traditional table sauces such as mayonnaise and ketchup and towards more sophisticated offerings.
A further increase in retailer private labels is expected with Lidl and Spar expanding into the Latvian market. These two retailers will raise the competitive edge in the retail distribution of sauces, dips and condiments at a time when consumers are heavily focused on price and promotions.
An increasing number of consumers will become more cautious about what to put in their bodies, and will be more conscious of ingredients. Reduced sugar will no longer be enough and for example, consumers will increasingly avoid products with monosodium glutamate and will also look for reduced salt.
